Home-made non-baked cheesecake by HS for MF's birthday the day before. We have the fortune of tasting it too. The cake is prettily decorated.

We chatted for quite a while and almost forgot about baking. We wanted to bake a pandan fudge cake which none of us has baked before. I have eaten this cake baked by LL and thought that it tasted really nice. Thanks to LL for sharing the recipe.

This requires 5-6 minutes of beating at 5-6 minutes.

A brand new oven and we were very privilege to be the first one using it !!!

Our first Pandan Fudge cake ... really greenie in colour. I suspected it was because we did not mix yellow colouring into the green colouring to lighten the colours. Anyhow, we were quite happy with our achievement of the day .. teamwork rocked ! We had a lot of fun baking the cake together despite the fact that I did not set the oven at all to bake the cake at first ! We have to wait a good 30 minutes more for the cake to be baked ! What a blunder ! I must admit that the 2 ladies did most of the baking ... kinda give instructions only .tsk tsk

While we have time, we admired the pretty bridal photos !

RECIPE FOR PANDAN FUDGE CAKE (from LL)Ingredients:4 eggs
100g sugar
100g plain flour
100g butter, melted
1/4 tsp pandan flavour green colouring
Coconut Filling:500g water
50g melted butter
150g sugar
150g water, combined with
250g Coconut milk
80g Custard powder
5 tsp green colouring & yellow colouring
Sufficient dessicated coconut
METHODPreheat oven to 160 deg
Grease and line a deep 9 inches round baking tin with paper
1. Whisk eggs, sugar, pandan flavour and green colouring at maximum speed for about 5-6 minutes until stiff (if watery means not ready)
2. Fold in sifted flour by hand, using an upward ciculating motion. Add in warm melted butter and mix well, until batter is shiny.
3. Pour into baking tin and bake for about 35 minutes. Turn cake out from baking tin and leave to cool. Cut into 2 layers.
FILLING METHOD
1. Boil water and sugar
2. Mix coconut milk, custard, green and yellow colouring together (using whisk) and add to no.1 and cook until thick.
3. Surround the cake with a 9 inches ring and pour the cocnut mixture onto the cake, between each layer. Leae in fridge to set.
4. Take out from fridge and coat with dessicated coconut.
